Should kitty and kunchen stack with their defense downs. I ask cause I’ve tested and they don’t.
No. Cheshire Cat applies just a regular ol’ standard Defense Down. It is NOT an elemental defense debuff, just normal. It only applies to Holy enemies, but that doesn’t make it an elemental debuff.
Since Kunchen’s is also just a regular ol’ standard Defense Down, they are the same ability, and so they overwrite each other instead of stacking.
Sorry about your bad luck, bud. 
Though… if you have Kunchen, that’s still good luck.
