I like that you broke out each stat to the level.
I usually generalize it and say a 5* reaches that “stronger than 4*” strength around 4^30.

Also since I know you love doing this… If we said an attack stat was worth 1, Defense 1, but health point worth 1/2, at what level would Isarnia’s sum be equal in points to Grimm?

Pah! I say.

Currently crunching numbers for v1.11 defense curve. If it didn’t change from v1.12 I won’t have to regather all that data set.

Defense changes a lot based on double and triple strong attackers at 5* level.

So next will be finding the best two 5* of each color from legendary training and finding their average attack stat by color, tripling that, and finding out how much damage that is against Isarnia.
