I used Chochin as a tank in rush attack no yellow, my results were not that good… So I’m scared a little to put him in defence. It was my first attempt, and my sample size of his performance is small and negative. 
I’ve never tanked with Coch before, but I have used him at flank previously with good results. Whether he will be better than Bjorn is up for debate. He’s hit 3 and has mana down, but Bjorn’s double snipe is pretty ruthless. I’m learning towards Bjorn, just for the 300% he deals on that 2nd hit as a finisher.
It’s even 350%. 
I agree on that. One mana controller is enough if he fires. More power needed, so Bjorn and Bauchan flanks. Let’s see if others have some brilliant ideas. 
The teams are solid but as Bubbles said before its better to play agressively in this one and AOE heroes are the best for this. Although from your teams i will surely pick the last one.

I’d be tempted by the third one, but swap Bauch to tank and Kvasir to flank.

Short on them… 
Melia without emblems and that’s it. Few attack on three, also no emblems but Nordri… Was thinking about tanking Bauchan, but the idea behind Kvasir as a tank is to discourage others from using him. Last time bloody battle, he was so good for me. And when I saw one on the flanks or wings, almost by the rule I’d charge mine before. Even when Kvasir in defence fires, defence couldn’t get minions.

I see what you mean… There will be plenty of attackers who don’t have him, and even those that do may not bring him (lots of players go mono in bloody).
Should go well either way, but I’d probably lean towards Bauch at tank myself.

If I go that way, which sounds also good (after all, Bauchan could make attacking Kvasir slower), should I put Berden as a green on the left flank (assuming attacker will use blue)? Bjorn or Balthazar on the wing? 
Ideally, keep wings fast.
If you’re going to use Bjorn, he wants to be at flank. Balthazar will go better at wing.

If you’re concerned about Kvasir on attack… Having yours on flank and dark on a wing might discourage attackers from bringing him against you?

I have tons of options to choose from, though - these are just my emblemed heroes:
Red: Ei-Dunn+19, Jahangir+20
Blue: cKaril+20, Nordri+20, Ulmer+20, Gato+6
Green: Isshtak+20,
Yellow: Kvasir+20, Gan Ju +20
Purple: A second Chochin+20, Balthazar+2, Prisca+9
Would any of the above be better than who I’ve picked?

Melia fast crit chance for all, or slow deadly DOT from Arman?
Average big damage from Bjorn, or more and faster mana control from c-Azar?

Difficult…
The risk to this defence is cleansing the defence debuff…
So purple cleanse or blue (defence buff from regular Gunnar) are good tactics against it.
In that sense, extra red potentially discourages green attack but makes blue attack more effective - then again, will it be snappy enough to get through cGunnar before he fires?
But equally, no purple means purple mono is all neutral except 1 (strong), so a clever attacker might go that way.
Mana control either side of Gunnar is going to make life difficult for attackers either way, so it should still be effective either way IMHO.
I’d probably drop Bjorn in there, but there’s arguments either way.

I’d run Bauch instead of Azar either way.
I wouldn’t double your tank colour, so that’s Tyrum or Gil out.
cGunnar comes down to what else is on your team - lots of AoE heroes suits cGunnar, lots of snipers doesn’t.
If you want to run a defence down tank, with snipers, it’s gonna be Gill…
Regular Gunnar is dispellable at slow, so Mnesseus is the obvious strong colour counter… Or you could hit it with cBrienne and flip it, then hit with AoE to take advantage of the spirit link.
To counter Gill in strong colour you’d need a cleanser (there isn’t one in holy) or a defence buffer (Kailani) and an attack buffer (there isn’t one… You’d have to go off colour with cHawkmoon, Brienne, etc).

@BubblesUK- bauch I do np. I just wanted to clarify what you mean re tank… If I used the 2nd team I posted after I edited my post, I’m thinking you like ©Gunnar at tank. ( I seem to have 2x snipers than aeos) On the other hand, I get the feeling that you like Gil ra at tank w/o tyrum because of the lack of counter- attacks in holy. Does that kinda sum it up?
